There is a gear icon next to the title of the contact form, click it to get to Feature Instnace Settings, there you can specify the email address to receive messages.

There is also a "View Messages" link near the title of the contact form (if logged in with edit permission) so even if email/smtp failure occurs you can get the message by viewing it right ion the web page.
